Chicken Bot Boi

1 boiling chicken (I use a couple packages of wings)
1 carrot, sliced
1 large onion, quartered
salt and pepper to taste
Bot Boi Noodles

Boil all together in enough water to make a good broth.  Cool chicken, remove meat, and return to broth.  Add Bot Boi noodles, cook thru.  This will absorb most of the broth.  This is then served over mashed potatoes.

We used to find Bot Boi Noodles at the supermarket, but they are no longer there.  Grandma Hogue made her own noodle recipe, but the noodles were cut in squares.  Now I can only use wide noodles from a package.

You can buy and order the Bot Boi noodles from Heini's Cheese House in Holmes County, Ohio in the Amish area.  I buy them from there.  I noticed on the Bot Boi recipes, that the author said she could not find the noodles.  I bought some yesterday. You have a great web site.

City Chicken

City Chicken , isn't even chicken.  In earlier days chicken was hard to come by but beef and pork were more readily available.

1 pound boneless pork cut into cubes
1 pound eye round steaks cut into cubes
1/2 cup flour
1/2 tsp. garlic salt
1/4 tsp. pepper
1/4 cup butter or margarine
3TBSP. vegetable oil
Hot Mashed Potatoes

Alternately thread pork and beef onto small wooden skewers.  Combine flour, garlic salt and pepper on plate and roll meat until coated.  In a large skillet, heat butter and oil over medium heat.  Brown 'chickens', turning frequently.  Drain.

Layer in a glass baking dish and cover with foul.  Bake two hours at 300 degrees F.

Thicken pan juices if desired and serve over mashed potatoes.
