Brown Sugar Pie

9" pie shell, unbaked

2 eggs

12 ounces evaporated milk

1 teaspoon vanilla

1 cup brown sugar

2 tablespoons flour

1/4 teaspoon salt

Mix eggs, milk and vanilla.  Pour into crust.  Mix sugar with flour and salt, sprinkle over egg mixture.  Bake 1 hour at 350 degrees F or until done.

Rhubarb Cream Pie

1 cup sugar

3 tablespoons flour

1 tablespoon butter

2 eggs

3 cups rhubarb, cut up

1 pie shell, unbaked

Beat eggs, add sugar and flour, pour over rhubarb in pie shell.  Dot with butter and top with lattice crust.

Bake 10 minutes at 450 degrees F, then 30 minutes at 350 degrees F.

Peach Cobbler

Blend well, then cook and stir until thick:

1/4 cup white sugar
1/4 cup brown sugar
1 tablespoon corn starch
1/2 cup water

Add:

1 tablespoon lemon juice
2 cups sliced peaches

Pour into a 2 quart baking dish.

Sift together:

1 cup flour
1/2 cup white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Combine with flour mix:

1/2 cup milk
1/4 cup soft butter

Stir until blended.  Spoon over fruit mixture.  Sprinkle with 2 tablespoons white sugar.

Bake at 375 degrees F for 40-45 minutes.

Macaroon Pie

9 inch pie crust
12 saltines, crumbled
12 dates, quartered
1/2 cup walnuts, chopped
3 egg whites, stiffly beaten
1 cup sugar
1/2 teaspoon baking powder
1 teaspoon almond extract

Mix saltines, dates and nuts.  Graduall7y add sugar to egg whites.  Add baking powder and almond extract, fold in crackers.  Spread in pie crust, bake 30 minutes at 350 degrees F.

Wet Bottom "Shoo Fly" Pie

Liquid Part:
1/2 teaspoon baking soda - dissolved in 3/4 cup of boiling water
1/2 cup molasses (Brer Rabbit - Yellow Label)
1 egg yolk, beaten well

Crumbs:
3/4 cup flour
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon cloves (optional)
1/2 cup brown sugar (packed)
2 tablespoons shortening
1/2 teaspoon salt

Directions:
Combine dry ingredients with shortening, using hands to work into crumbs.

Line a 9" pie plate with pastry (use your favorite pie crust recipe).

Fill crust with liquid and top with crumbs.

Bake in hot oven (400 degrees F) for about 10 minutes or until crust starts to brown.

"REDUCE" oven to 325 degrees F and bake until firm (approx. 30 minutes).
